I’ve been putting a serious hurtin’ on the holiday cookies this year, this one however is my all time favorite. If you like peanut butter half as much as I do then try these. I mean, look at that ingredient list - how could you not love them. Ha!
Buckeye Recipe
1 1/4 cups butter, softened
1 (18-ounce) jar creamy peanut butter
7 cups sifted powdered sugar (about 1 1/2 pounds)
3 cups semisweet chocolate morsels
1 1/2 tablespoons shortening
Process butter and peanut butter in a food processor until thoroughly blended. Add 3 cups powdered sugar, and process until smooth. Gradually add remaining powdered sugar in 2 batches, processing after each addition until mixture pulls away from sides and is no longer crumbly. Shape into 1-inch balls. Cover and chill thoroughly.
Combine chocolate morsels and shortening in top of a double broiler; bring water to a boil. Reduce heat to low; cook until chocolate melts, stirring occasionally. Remove pan from heat, leaving chocolate mixture over hot water.
Use a tooth pick to dip each ball in chocolate, coating three-fourths of ball; place on wax paper. (I only coated bottom half this time). Place in refrigerator to set, once ready remove to place in airtight container. Store in the fridge until ready to serve. (Recipe makes 8 dozen)
