Ham, Broccoli and Cheese Egg Muffins

These muffins are a great make ahead snack. Perfect for a healthy breakfast or grab and go snack. p.s. even the kids love them!



Ingredients:

6 eggs

1 c. chopped broccoli

1 c. shredded cheddar cheese

4 slices of deli ham, cut into small pieces (I use sliced low sodium ham from the deli counter)

1/2 tsp. salt

1/2 tsp. black pepper

1/4 tsp. garlic powder

Trader Joes everything but the bagel seasoning

Optional: hot sauce


**I double this recipe which makes 12 muffins


Directions:

1. Preheat oven to 350 degrees, coat muffin tin with nonstick cooking spray

2. Steam or boil broccoli until soft, cut into small pieces

3. Chop up ham and set aside

4. In a bowl mix eggs, garlic powder, salt and pepper and the optional hot sauce

5. Add cheese, broccoli, and ham to the egg mixture

6. Evenly distribute egg mixture to the muffin tin making sure you only fill halfway

7. Sprinkle EBTB seasoning on each muffin before placing in oven

8. Bake for 20 to 25 minutes or until egg is fully cooked and golden


Serve hot and eat as is or with a side of salsa. You can store the leftovers in a zip-lock plastic bag in the fridge. Each for a grab and go snack, eat cold or pop them in the microwave!
