A few weeks back I made this super easy chicken salad from Trader Joes on my Instagram stories, y’all went crazy for it so here it is!
I spend most of my days working from home and while I usually drink my smoothie this Trader Joe’s chicken salad is a near second favorite. I’m all for convenient so with only a few ingredients this recipe is easy to make ahead for either lunch or an afternoon snack. You can serve it over a salad, with a slice of toast or eat it like it is (which is typically what I do). Enjoy!
What you'll need:
2 c. Trader Joes grilled chicken strips chopped (you could also use a shredded rotisserie chicken or your own grilled chicken breast)
2 celery stalks
4 tbsp. Veganaise (the purple bottle)
Salt & Pepper
Directions: Start by dicing up the chicken, I typically like to make a few servings worth so feel free to double this recipe. Dice up the celery and combine with chicken. Add Veganase (or mayo of choice) to the chicken and celery. I prefer my chicken salad on the lighter side so feel free to add more mayo if needed. If you like a kick go ahead and add some sriracha as well. Lastly add some salt and pepper to your liking.
Serve it: Depends on the day but I typically eat over a bed of greens, with a few crackers or just as it is. Best part - it's even better the next day!
